French Toast Sausage Roll-Ups

Ingredients:

  • 2 cups Mom’s Best® Crispy Cinnamon Rice® cereal
  • ½ teaspoon ground cinnamon
  • 10 slices whole grain bread
  • 10 fully cooked sausage links
  • 4 large eggs
  • ½ cup low fat milk
  • 1 teaspoon vanilla extract

Instructions:

  • Crush cereal in food processor or blender. Mix cereal with cinnamon in shallow plate or bowl; set aside.
  • Slice crusts off bread. Flatten bread with a rolling pin.
  • Place a sausage link on one edge of bread and roll up tightly.
  • Mix eggs, milk and vanilla in shallow container.
  • Pour 1 tablespoon oil into 12-inch nonstick pan, heat over medium heat.
  • Dip rolls into egg mixture, rolling gently to coat all sides, then dip into cinnamon-cereal mixture; place in heated pan.
  • Cook about 1 minute per side, turning quickly and carefully until golden brown on all sides. Continue to use oil as needed, while browning roll ups. Serve warm.
  • Makes 10 roll-ups
